About Dr. Mora
Dr. Mora is an Assistant Professor in the Nutrition Program at SIUE. She obtained her Ph.D. in Nutrition and Epidemiology from the University of Arizona in 2006. She completed her master’s degree in Nutrition and Fitness from Florida State University in 1992, after completing her Dietetic Internship at St. Louis University. Dr. Mora earned her bachelor’s degree in Dietetics from Miami University. Dr. Mora is a Registered Dietitian whose career includes clinical practice in diabetes education, cardiac rehab, and nutrition counseling. Dr. Mora worked in public health and community research around policy, practice, and environmental change to prevent childhood obesity.
Research Profile
Dr. Mora’s research focuses on sports nutrition education for athletes, primarily high school and collegiate age athletes. Specifically, Dr. Mora is interested in testing technology based and social media methods for teaching evidence-based sports nutrition to athletes, parents, and coaches. Currently, Dr. Mora has collaborations for research and sports nutrition education with several regional high schools and the SIUE Athletic Department. Another area of research Dr. Mora is exploring is the current effects of COVID-19 on individual’s food choices, habits, and food preferences while experiencing various types of quarantine or restriction. Dr. Mora is also exploring the impact of COVID-19 restrictions and regulations within the food industry. Finally, Dr. Mora’s clinical interest is around food science and food product development specifically for treating and/or preventing low bone density. Dr. Mora has presented her research at the 2020 SCAN Symposium and the 2018 Lilly Education Conference.
Dr. Mora teaches several courses throughout the Nutrition Program including Intro to Food Science (NUTR 205), Intro to Human Nutrition (NUTR 250), Food Service Management 1 (NUTR 408), Quantity Food Preparation and Production (NUTR 409), Food Service Management 2 (NUTR 410), and Advanced Sports and Exercise Nutrition (NUTR 513).
